After announcing renowned Canadian chef Shelley Robinson as the new director of food and beverage operations at Big White Ski Resort for Compass Group Canada in July, Big White has shifted gears again and is bringing food and beverage services back in-house. “Huge change. We canceled a 10-year contract and are rebuilding the team from the ground up,” says Big White Vice President Michael J. Ballingall. Food and beverage services will now be managed by Trevor Hanna, Big White’s current vice president of hospitality. “Trevor was there the whole time, but he was our link between our company and theirs. As of today, we broke up [with Compass] very friendly but we thought we should take it back home to better serve our customers. Skiers understand skiers,” says Ballingall. Robinson took on the new role in July, but two months later, she’s moving on. “He resigned from Compass and did not enjoy their relationship. We didn’t enjoy their relationship. When we hired them, we were looking at someone who was big enough to help us manage the costs of a large company that could buy food and beverage at a much more discounted rate than we could,” says Ballingall. However, like many employers in the Okanagan, finding workers continues to be a challenge. “They just couldn’t get people to come and work in the snow, so they were always fighting for staff. There were no more synergies. So we decided to bring it back home.” Now Big White is looking for everything from the chef to the dishwasher, and everything in between, front and back of the house. The Big White is getting ready to wrap up its summer season after the long weekend with a bonus weekend scheduled for September 10th and 11th. The winter opening looks set to be November 24, 2022. Ballingall says it’s too early to predict what the ski season has in store, but based on other destinations in the industry, he hopes it will be another big snow year. “The southern hemisphere had one of the best ski seasons in history and we usually follow suit. When they have a good year, we have a good year. When they have a bad year. We have a semi-bad year. The Big Whites have never had a bad (snow) year. It’s been over 15 years since we’ve had less than 100cm of snow at Christmas,” says Ballingall.
